Cowgirl Bread

This is a recipe based on an old-fashioned quick bread called “cowboy bread”. It is a type of coffee cake that pairs well with a hot bowl of hearty chili. Since we are all ladies, we figure we call it “cowgirl bread” of course!

Ingredients:

  • 1 cup soft butter

  • 3 cups sugar

  • 6 eggs

  • ½ teaspoon salt

  • ¼ teaspoon baking soda

  • 3 cups unbleached flour

  • 1 cup sour cream

  • 1 teaspoon vanilla

    Topping:

  • 1 cup dark brown sugar

  • 1 ½ tablespoons ground cinnamon

  • ½ teaspoon ground nutmeg

Step One:

In a mixing bowl, beat butter and sugar until very light and fluffy.  Add eggs one at a time, beating well after each addition.

Step Two:

In a separate bowl, combine salt, soda, and flour.  Stir well.  Add flour and sour cream alternately to butter mixture, ending with flour.  Stir in vanilla.  Spread batter in a buttered 9x9 inch baking pan.

 

Step Three:

Mix topping ingredients together; sprinkle evenly on top of batter. 

Step Four:

Bake in a 300°F oven for 1 hour. Let cool slightly before cutting into portions.
